Here’s a cheat for green pesto when there’s no nuts in the house – using nut butter!! You can swap the kale for any green veg – spinach, basil or even wild garlic.
Bunch of Kale with stems
1 tbsp almond butter
2 garlic cloves
1 tsp lemon juice
A pinch of salt
Add all ingredients to a food processor and pulse until smooth.
Serve on toast with a fried egg for a quick lunch!
